We switch from the chromeos-5.10 kernel with crostini configs to a stripped down config building the mainline 6.1 branch. This allows us more control over the guest kernel for testing and significantly speeds up e2e tests (~4s -> 1.2s for all tests run with nextest). The rootfs is switched to Debian as that's what we use elsewhere which makes this easier to maintain.
