Stop overriding cancelOperation (#21667)

This was added before we were handling key equivalents, and is no longer
needed. Furthermore in the gpui2 re-write we stopped sending the correct
modifiers so this hasn't worked for the last year.

Fixes #21520

Release Notes:

- Fixed a bug where cmd-escape could act like .
